First of all…  I NEED to talk about this Kashi no cheese Sicilian veggie pizza.  Last week I found out that lots of vegans order pizza at a normal restaurant, and just order NO CHEESE and get veggie toppings.  Excited by this, I ordered pizza that night for dinner, with no cheese..  And I was surprised at how delicious it was. 🙂

So naturally when I saw this Kashi no cheese pizza in the store I HAD to try it.  I cooked it up on Monday morning and just nibbled on it throughout the day.  The whole pizza is about 600 calories, which is really not bad at all.  It was too big for me to eat all at once, but you could totally save some for later like I did.  I really loved this pizza, and I give it an A+++.  I know that this weekend when I am grocery shopping I’m going to look for this first. 🙂  It was the last one left in the store, so it’s pretty popular.

 

And now, on to this morning. 🙂

I’m still a bit under the weather this morning, so I made a simple cucumber sandwich.  Recipe?  Here you go:

Toast two slices of bread. 

Add a thin layer of vegan mayo (I used veganaise) to both pieces of bread.

Add a little pepper to both pieces of bread.  (Optional, add salt to taste as well..  I usually leave that part out.)

Layer cut cucumber “coins” on one slice of the bread. 

Voila!  Tasty, crunchy, yummy cucumber sandwich. 🙂

I am also munching on some dry cheerios this morning.  I know I have almond milk in the fridge, but I actually like my cheerios best dry. 🙂  See you all for lunch!
